Molecular Gastronomy bar

Discovered this place because I was having dinner nearby and found out that they do Molecular Gastronomy, which seemed interesting because it looked like a small bar.

There are two sessions in the evening so I had to book in advance the earlier session.
When I arrived, there were no seats at all hence the reason they are called Three Dice Kitchen Standing Molecular.

The cost is $200 per head, which you pay before you go in.
I felt that it was a pretty good deal for a six-course dinner as other places are charging over $1000.
While I was waiting for other people to arrive, they will give you this bottle with a magnet and it was really fun using the magnet on the metallic liquid inside.
It was an entertaining and educational Molecular Gastronomy experience because they don’t hide anything and explain every step.
The six course comes with a drink so I had the sweet butterfly pea tea which is blue and turns purple when you add lemon to it.

The cutlery that they give you is different from your usual fork, knife and spoon.

Started with the fizzy peeled cherry tomatoes, that were soaked in fizzy vinegar.
I really liked them and found them extremely appetizing with bursts of fizzyness.

Next we had the hami-melon molecular sphere on jamon Iberico.

Then we had this sour cream nitro dome filled with salmon and potato drizzled with dill oil.
The nitro dome was made in front of us by putting sour cream on to a ladle and filling it with salmon and potato and sealing it with sour cream and immersing it into liquid nitrogen.

The white dome tasted a bit like savory frozen meringue icecream with delicious pieces of salmon and potato inside.

We were then served these cute cups filled with cauliflower, lobster foamed topped with caviar.
The lobster foam had a really strong taste, which flavoured the cauliflower pieces that had a nice crunch to it.

Then we moved on to a warm course of smoked chicken, which had soft cotton like texture paired with fragrant herbs.

The last course was Chinese style potrice paella with Kobe beef cheek and garlic cream air.
I really liked it because of the rich abalone sauce and there were lots of chickpeas in the rice.
It tasted like a savoury dragon boat festival zhongzhi.

As a surprise, they gave us some Nitrogen soaked macarons which have interesting effects on you.
I won’t spoil the fun here but the molecular gastronomy specialist will demonstrate what happens when you eat it which looks quite scary but you won’t feel anything.

At the end, they gave out business cards, which were really cool, because it pops up into a DICE.

Previously tried Yum Cha at TST which was delicious but to be honest it is more convenient for me to dine on the Hong Kong side.
I wanted to go last week but it wasn't open yet so went today when it opened and you get $50 off when you spend over $200.

The Sheung Wan branch is slightly different, there is a truck at the entrance and there is a huge glass window with views of Des Voeux Road.
Decided to try different dishes tonight and here was what I had:

Spicy minced pork and glass vermicelli:
Ordered this because I love glass vermicelli and it was stir fried with minced pork and chili which gave it a lovely spicy kick while the glass vermicelli was springy.
You can ask for different levels of spiciness when ordering.

Jumbo pork ribs in shrimp paste:
I don't normally order ribs but the product shot showed these crispy ribs and it was coated in shrimp paste taste which means tasty!
The ribs were as good as expected because I loved the crispy coating with a salty shrimp taste.

Fried red rice with salty fish and chicken:
Basically it looked like beetroot fried rice but it tastes how it should with salty fish and chicken it in.

hot custard buns:
These are custard buns that will ooze out with custard cream that is not too sweet.
Since I have tried them at the TST branch, I decided to poke them in different areas for fun!!

To be honest, there are not many places worth recommending for dimsum in Hong Kong because the quality is just a sloppy mess laced with oil.
I am glad my list of good yum cha places in Hong Kong has increased to four with this one.
As well as the lovely presentation, which gives me motivation to take pictures, the dimsums are not oily or too sweet.
Yum Cha has a huge open kitchen where you can see them prepare food.
They had cute bowls with goldfishes in them.

Orange wintermelon:

Wintermelon is considered bland but here it is soaked in orange juice which gives it an appetizing taste bursting with orange juice.

Pickled cucumber:
These are baby cucumbers which still have their flowers attached.
Crisp and crunchy in delicious vinegar.

Sticky rice dumplings:

BBQ piggy buns:
The boring bbq pork buns have been turned into cute piggy buns filled with delicious bbq pork inside.

Hot custard buns:
These are custard buns that will ooze out with custard cream that was not too sweet.

Crispy pineapple puffs:
The bird shaped pineapple pastries are served inside the birdcage but to be honest it is not a puff as the menu suggests because the pastry is not filo or puff pastry.

Shrimp and vegetable dumplings:
Colourful and glistening prawn dumplings with springy prawn inside.

Organic kale with garlic:
It makes sense to cook organic kale with garlic because kale is quite similar in appearance and taste to Chinese kale.

Baby cabbage with parma ham:
The broth to this was really nice and the parma was presented beautifully like a rose.

Black peppered wagyu beef:
Although the beef was the star, I quite liked the crispy lotus root slices.

Egg white and seafood fried rice:
I love the rice because it was stir fried in squid ink so it had a nice squid flavour to it.

Apple egg tartlets:
This was pretty but the chopping board reminds me of the ones used in the Chinese takeaways in the UK.
It was nice the egg tart was different because it was thinly sliced apple shaped into a rose on top of a normal egg tart.
